During the last decades of intensive farming, our hedgerows have been destroyed, leaving a housing and food shortage for small animals, birds, butterflies and bees.

It is essential we try and restore our hedgerows to encourage wildlife and each and every metre helps. It is not necessary to have a lot of land, a small space will do.

Hedgerow Jelly
1kg/2lbs haws, 500g/1lb crab or cooking apples, 225g/8oz elderberries, approx 1.5k/3lbs sugar. Makes approx 3kg/6lbs jelly so adjust quantities accordingly.
Wash the fruit, chop the apples and gently simmer all the fruit together, just covered for about 2 hours, until softened. Strain and weigh the juice. Add the same weight of sugar to juice and bring back to the boil. Skim off scum, pour into sterilized jars and seal.
