The Elder tree is a recognisable part of hedgerows, gardens, and woodland edges; it usually grows as a multi-stemmed shrub, but as a tree it can grow up to around 10 metres in height. Its frothy sprays of cream-coloured blooms appear early in the summer, filling the air with a sweet fragrance and loved by pollinators. These flowers are followed in late summer and early autumn by clusters of glossy, blue-black berries. These berries are loved by birds and traditionally used for cordials, jams, wines, and syrups. The Elder is fast-growing, hardy, and adaptable, often springing up naturally in fertile soils and semi-shaded positions. It provides valuable food and shelter for insects, birds, and small mammals. Culturally, the Elder has a long tradition in folklore, where it was regarded as having protective powers, so is often planted near homes for good luck. It is easy to grow and rewarding to harvest, the Elder is an ideal tree for wildlife gardens, hedgerows, or anyone wishing to enjoy its combination of beauty, productivity, and heritage.
The flowers can be used for Elderflower cordial, champagne, gin, jelly, fritters, sorbet and cake.
